Preparation:
1. Break the coconut into halves. Be careful that the coconut water does not spill because this will be used in the process.
2. Grate the coconut meat through a grating machine. In the Philippines, however, people do the process manually with the help of a bench coconut grater called kudkuran.
3. Gather the coconut meat and put it in a nylon bag then it is squeezed until all possible milk is produced. Squeezing may be done by hand or by a cold press machine.
Fermentation:
1. Mix the coco milk with the coconut water in a transparent container/bottle.
2. Put them aside at room temperature and let them stay untouched for not more than twenty hours. This process permits the natural protein to separate and to settle above the oil and water. Later, you will also notice the water to fall to the bottom of the bottle leaving the oil in the middle.
3. Harvest the oil and let it go through series of filtering.
Low-heating:
In low-heating, just follow the same steps in the preparation of extracting the coconut milk from the coconut meat. Instead of setting the milk aside, you put it on low-heat and let the water/moisture content of the coco milk evaporate until only the oil is left.
